Where to Eat Delicious Sweets:
Jodhpur is famous for its sweets. One can find a large
crowd at every shop of sweet delicacies. Its in tradition
of jodhpur that first you have to eat sweet and then
start other food. One can't escape from sweet hospitality
("Mithi Manuhar") of Jodhpur and than quite
appropriate that this is the secret of the sugary tone
of the citizen of this city. 'Mave ki Kachori' , 'Besan
ki Chaaki', 'Maakhan Vade' are some of the most famous
sweets of Jodhpur. Janta Sweet Home, Jodhpur Sweet Home",
Pokhar Sweets are some of the shop where one can find
a quality and variety of sweets.
Daal -Baati, Pachkuta & Bajre-ka-Khich :
Perhaps the best known food is the combination of daal,
baati and churma. Daal being a combination of 5 pulses
cooked in Baati being the bread, which is a ball of
kneaded flour baked and soaked in ghee (clarified butter).
This dish is traditionally eaten in the colder season
and is combined with Churma Ladoo’s, a sweet.
As the name sounds, pachkuta has five basic ingredients-
sangri, kair & kumtia, dried red chillies, amchur
cooked in oil and basic masalas. Another delicious cool
dish is bajre ki khich. This is a tasty khichidi made
with millet, yoghurt, masala & peas with chopped
ginger & turmeric. This is served with chaach ka
Khatta made from buttermilk.
Spicy Breakfast :
Most of the citizen of this city start their breakfast
with the world famous 'Samosas', 'Kachoris' and 'Mirchi
Vadas', Its not only famous among jodhpur people but
appeal to the palate of the tourists. A visit to Jodhpur
would be wasted without a bite of its spicy ' Pyaz ki
Kachori and Mirchi Vade'. All that one has to do, to
taste and purchase the myriad specialities of the town,
is to roam in and around Sojati Gate, one of the few
areas still untainted by outside world.
Kair-Sangri :
Jodhpur's food is highly spiced to preserve and contains
number of berries and roots from desert that are healthy
and herbal. In a state of desert and water paucity,
marwaris had to be innovative to survive and therefore
the fine art of food preservation became the greatest
need. Some of the preserved food stuff includes: Kair-sangri
(radish pods); cluster beans, large red peppers, methi
seeds, tamarind, raw mangoes for amchur, urad &
moony dal papads and Vadis.
